In the heart of Kakamega, Kenya, Columbus Cafe Restaurant opened its doors in 2020 as a beacon of Somali culinary culture. Founded by a team of passionate entrepreneurs who grew up immersed in the rich traditions of Somali cuisine, the restaurant aimed to bring authentic flavors to a broader audience while introducing modern twists that appealed to contemporary palates. 


From the start, the menu celebrated classic dishes like bajiye (Somali fried rice), muqmad (spicy dried meat), and canjeero (traditional flatbread), all prepared using time-honored recipes passed down through generations. However, the founders also recognized the need for innovation, especially in a rapidly evolving food scene. In 2020, they introduced their first signature halal burger, combining tender beef patties with locally sourced spices and fresh ingredients—a nod to global trends while staying true to their cultural roots.

As the world adjusted to new realities in 2021, Columbus Cafe Restaurant responded by expanding its offerings to cater to diverse dietary preferences and lifestyles. Recognizing the growing demand for healthier options, the team added plant-based proteins and vegetarian versions of popular Somali dishes to the menu. For instance, the vegan muqmad became an instant hit, featuring jackfruit marinated in traditional Somali spices and served alongside grilled vegetables. Additionally, the café embraced technology by launching an online ordering platform, allowing customers to enjoy their favorite meals from the comfort of their homes.
